Lately, I’ve been attempting to reduce the amount of processed food we eat as a family. I say attempting because it’s difficult to move away from processed food after years of unhealthy eating habits.
One of the hardest things has been finding healthy unprocessed snacks that my picky 3 year old loves. Seriously if it’s not cheese flavored and from a package, this kid doesn’t want it. On top of that, I now have the added issue of trying to find something that my 1 year old with multiple food intolerances can also eat. So the fact that these contain no eggs or milk means that its a snack he can enjoy!
After a little trial and error, I finally found a healthy unprocessed snack that the whole family can’t get enough of. These amazing little Blueberry Energy Balls!!! They seriously taste like little blueberry muffins!
Not only are they absolutely delicious and healthy but they are super easy to make! The fact that they’re no back and only consist of 4 ingredients means that you can make a batch of these in just a few minutes. Which is perfect because between two kids and being 26 weeks pregnant I don’t have a ton of extra time or energy to make snack foods.
The key ingredient in these energy balls are the Medjool dates. Not only are they a natural energy booster but they contain twice the amount of potassium as a banana and more magnesium. They’re also a great source of calcium, iron, folate, vitamin B-6, vitamin A, and fiber. For some more ideas of what to make with dates check out this Creamy Banana Date Smoothie.
To make these Blueberry Energy Balls start by combining all the ingredients except for the blueberries into a food processor ( I use this Hamilton Beach Food Processor). Pulse for about 45 seconds. Then add in frozen blueberries and pulse for another 30 seconds.
Once that’s done measure out about a tablespoon of the mixture and roll it into a ball. After they are all rolled out they can be stored in the fridge for several days. Although they never last more than a day or two in my house!
Blueberry Energy Balls
- 2 Cups Cashews
- 6 Dates
- 1/4 Cup Frozen Blueberries
- 1 Tsp Lemon Juice
- 1/4 Tsp Salt * If using unsalted Cashews
Remove pits from dates
Add Dates, Cashews, Lemon Juice, and Salt if using unsalted cashews
Pulse in food processor for 45-60 seconds
Add frozen blueberries and pulse for an additional 30-45 seconds until a paste is formed
Use a tablespoon to scoop out paste and roll into balls
